Meals Under $10 - Black Beans & Rice with a Twist ;)

If you follow this blog, you probably already know I love beans!

Beans are so healthy, delicious and cheap! And on top of that there are endless possibilities!

Today I made some black beans with a little something extra ;) and they are mighty good!

Here is the recipe - And yes, it is under $10!

Black Beans and Rice with a little kick!
Makes Approximately 4 large servings

Total Cost : Approximately $7.00 (I always add about $1 for spices when they are dried and for the tsp. and tbsp. of olive oil)

SAUTE IN A PAN WITH 1TBSP. OLIVE OIL
1/2 cup chopped yellow onion - $.50 (about a half of a medium sized onion)

ONCE ONIONS HAVE BROWNED ADD AND MIX WELL
- 1 Tsp. salt
- 1 tsp. pepper
- 1 tbsp. garlic powder
- 1 tsp. ground paprika

ONCE SPICES AND ONIONS ARE MIXED UP ADD
- 1 Bag of Black Beans $1.49
- 5 cups of water

LET COOK FOR 45 MINUTES ON MEDIUM HEAT - MIXING EVERY 15 MINUTES SO THAT THE BOTTOM DOESNT BURN

AFTER 45 MINUTES - ADD TO BEANS AND MIX WELL
- 1 Can tomato paste $.89 (You can also do a can of crushed tomatoes if you want whole pieces of tomatoes in your beans, I was out of crushed tomatoes so I just used tomato paste :)
- 2 cups frozen corn $1.50
- 3 more cups of water

LET COOK FOR 10 MORE MINUTES AND SERVE OVER RICE. I like to make about 1.5 cups of rice for this recipe and just add a little pepper and salt to the rice water while it cooks $1.50

DONE!
